Strawberry Coconut Popsicles
So, keep a stash in your freezer, they are super easy to make.
About this Recipe
This is a great alternative to store bought sugar and preservative filled alternatives. I love experimenting with different fruits and love the creamy Coconut flavour which is a fantastic non-dairy alternative.
- 1 cup frozen strawberries (fresh or frozen)
- 1 1/2 cups Coconut milk
- 1/2 tsp Vanilla extract
- 1 tbsp Maple syrup (optional)


Step by Step Instructions
Step 1
Place all the ingredients in a blender and blend until smooth, taste for sweetness, adjust as required. If the mixture is too thick add a little water.
Step 2
Pour the mixture into popsicle molds and freeze for 4 to 5 hours.
Step 3
To serve run the popsicle mold under hot water for a few seconds to easily slide out the popsicle.
Step 4
Serve.
Tips

Instead of blending the mixture to a smooth consistency, pulse to keep chunks of the fruit in the popsicle.

If you like a tart flavour to your popsicle, add a dash of freshly squeezed lime juice.

Add Chia seeds for extra fiber and texture.

This recipe can be replaced with any fruit, try pineapple for a pina colada flavour.

If using berries, always use organic as conventional berries are heavily sprayed with pestisides.
