Strawberry Coconut Popsicles

Description

This is a great alternative to store bought sugar and preservative filled alternatives. I love experimenting with different fruits and love the creamy Coconut flavour which is a fantastic non-dairy alternative.

Ingredients

Main Ingredients

  • 1 cup of Strawberries, (fresh or frozen)
  • 1 1/2 cup of Coconut Milk
  • 1/2 tsp of Vanilla extract
  • 1 tbsp of Maple Syrup, (optional)

Equipment

Instructions

  • Place all the ingredients in a blender and blend until smooth, taste for sweetness, adjust as required. If the mixture is too thick add a little water.
  • Pour the mixture into popsicle molds and freeze for 4 to 5 hours.
  • To serve run the popsicle mold under hot water for a few seconds to easily slide out the popsicle.
  • Serve

Notes

Tip #1 Instead of blending the mixture to a smooth consistency, pulse to keep chunks of the fruit in the popsicle. Tip #2 If you like a tart flavour to your popsicle, add a dash of freshly squeezed lime juice. Tip #3 Add Chia seeds for extra fiber and texture. Tip #4 This recipe can be replaced with any fruit, try pineapple for a pina colada flavour. Tip #5 If using berries, always use organic as conventional berries are heavily sprayed with pestisides.
