Nutty Chocolate Granola Bar

Description

This is a delicious treat which is high in good fats, packed with nuts and protein and easy to make! Enjoy it as a great On-the-go snack, an afternoon Pick-me-up or as a Party pleaser.

Ingredients

  • 1.5 cups of Rolled Oats
  • 1 cup of Raw Pecans
  • 1 cup of Walnuts
  • 3/4 cup of Raw Cacao Powder
  • 1/4 cup of Almond Butter
  • 1/4 cup of Coconut Oil
  • 2 tbsp of Raw Honey, (optional as the Dates are already sweet)
  • 1/4 cup of Raw Sunflower seeds

Equipment

  • Vitamix
  • Baking Pan 9×9
  • Parchment paper

Instructions

  • Process walnuts in a food processor or Vitamix to a loose meal texture, remove and set aside.
  • Add coconut oil and dates and process to a “dough” like consistency.
  • Add walnut meal and cacao powder to the dates and process to combine.
  • Transfer mixture to a large mixing bowl and add the oats, pecans, almond butter, honey (if using) and stir to combine. Use your hands to really combine all the ingredients well, I applied coconut oil on my hand before mixing so the mixture wouldn’t stick all over my fingers.
  • Once thoroughly mixed, transfer to a parchment paper lined 9×9” pan and spread it out, you want ½” thickness so don’t spread it too thin. If you don’t have the right sized pan use part of a bigger pan preferably square or rectangle shaped. The parchment paper will help lift it out easily so don’t miss this step.
  • Sprinkle the sunflower seeds, press it down firmly with the back of a measuring cup and cover with parchment paper. Freeze for 20 minutes to harden.
  • Lift the parchment paper from the pan and transfer to a chopping board. Cut the bars anyway you like e.g. rectangles, squares etc.
  • Store in an airtight container in the freezer or fridge and enjoy this delicious treat!
